The following is my favourite double chocolate chip biscuit recipe: enjoy.
Sarah's biscuits of awesome
Ingredients:
- 125g salted butter chopped
- 2/3cup (ish) dark brown sugar
- 1/3cup (ish) caster sugar
- 1 egg
- 1tsp vanilla extract or 1 vanilla bean
- 90g dark chocolate (85% is good) roughly chopped
- 2cups wholemeal self raising flour
- 1/3cup cocoa powder
Method:
- Pre-heat oven to about 180 degrees celsius.
- In mixing bowl - beat butter and sugar until creamed.
- Add egg and stir until well combined.
- Add vanilla stir.
- Sift in cocoa, and add flour and chocolate, stir until well combined (should be a moist but sticky dough).
- Roll table spoon sized portions into balls and onto lined baking trays.
- Bake in oven for around 10-12 minutes - so they are still slightly gooey in the centre.
- Cool on wire racks - and eat with coffee.
These biscuits are one of my favourite things to take to work, they are usually eaten within the day.
