Biscuits of Awesome

The following is my favourite double chocolate chip biscuit recipe: enjoy.


Sarah's biscuits of awesome


Ingredients:



  • 125g salted butter chopped

  • 2/3cup (ish) dark brown sugar

  • 1/3cup (ish) caster sugar

  • 1 egg

  • 1tsp vanilla extract or 1 vanilla bean

  • 90g dark chocolate (85% is good) roughly chopped

  • 2cups wholemeal self raising flour

  • 1/3cup cocoa powder

Method:



  1. Pre-heat oven to about 180 degrees celsius.

  2. In mixing bowl - beat butter and sugar until creamed.

  3. Add egg and stir until well combined.

  4. Add vanilla stir.

  5. Sift in cocoa, and add flour and chocolate, stir until well combined (should be a moist but sticky dough).

  6. Roll table spoon sized portions into balls and onto lined baking trays.

  7. Bake in oven for around 10-12 minutes - so they are still slightly gooey in the centre.

  8. Cool on wire racks - and eat with coffee.

These biscuits are one of my favourite things to take to work, they are usually eaten within the day.
